You can always start your paintings with an acrylic under painting. If you were to start straight away with oil paintings, the initial layer would take some time to dry. Once there is an acrylic layer, it acts as a time saver as oil paints too would tend to dry that much more quickly.

In fact oil paintings can be left in the open for long periods of time. This is not something that you can do with watercolors.
